  • 2 ripe avocados
  • 1 large ripe mango
  • 1/4 cup fresh cilantro
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Peel and devein the shrimp if needed, then rinse under cold water and pat dry.
  2. Marinate the shrimp in olive oil, garlic powder, salt, and pepper for about 15 minutes.
  3. Heat a skillet over medium-high heat, then cook the marinated shrimp for 2-3 minutes per side until they turn pink and opaque. Remove from heat.
  4. Dice the avocado and mango into bite-sized pieces. In bowls, layer the cooked shrimp followed by diced avocado and mango. Top with chopped cilantro.
  5. Drizzle fresh lime juice over each bowl before serving.
