  • 1/4 cup chia seeds
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • 1/4 cup vegetable oil
  • 1/2 cup unsweetened non-dairy milk (almond or oat)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and chia seeds.
  3. In another bowl, mix lemon juice, zest, vegetable oil, and non-dairy milk until well combined.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Spoon the batter into the greased mini loaf pan and bake for 25-30 minutes or until golden brown.
  6. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
