Ingredients

  • 8 oz fusilli or penne pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 cup cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cherry tomatoes, bell peppers, cucumber, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
  4. In a large bowl, combine cooled pasta and chopped vegetables. Pour dressing over the top and toss gently until well coated.
  5. Chill in the fridge for at least 30 minutes before serving.
