- 8 oz fusilli or penne pasta
- 1 cup cherry tomatoes (halved)
- 1 cup bell peppers (mixed colors, diced)
- 1 cup cucumber (diced)
- 1/2 red onion (thinly sliced)
- 1/2 cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, bell peppers, cucumber, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
- In a large bowl, combine cooled pasta and chopped vegetables. Pour dressing over the top and toss gently until well coated.
- Chill in the fridge for at least 30 minutes before serving.
