  • 1 3/4 cups (220g) all-purpose plain flour
  • 1 cup (200g) granulated sugar
  • 2 1/4 teaspoons baking powder

  • 3/4 cup (190g) dairy-free milk (room temperature)
  • 1/4 cup (55g) neutral flavored oil
  • 1/4 cup (55g) melted vegan butter (and cooled or extra oil)
  • 1 teaspoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F). Prepare an 8-inch round cake pan by lining it with parchment paper and greasing it.
  2. In a saucepan over low heat, melt vegan butter, then stir in brown sugar, maple syrup, cinnamon, and salt until combined. Fold in chopped pecans.
  3. In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, mix dairy-free milk, oil, melted butter, vinegar (if using), and vanilla extract until smooth.
  4. Combine wet and dry ingredients until just mixed. Pour the pecan mixture into the pan followed by the batter.
