- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs, room temperature
- 120g heavy cream (½ cup), room temperature
- 240g sour cream (1 cup), room temperature
- 1 tbsp cornstarch
- 2–3 tablespoon lemon juice
- 1 lb strawberries, roughly chopped in large chunks
- 55g sugar (1/4 cup)
- 1 tsp cornstarch
- Juice of 1/2 a lemon
- Fresh strawberries for decoration (optional)
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into a springform pan and bake for 10 minutes. Allow to cool.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, salt, vanilla essence, and mix well. Add eggs one at a time; then mix in heavy cream, sour cream, cornstarch, and lemon juice until combined.
- Pour filling over the cooled crust and bake for 60-75 minutes until slightly jiggly in the center. Cool in the oven for an hour.
- For the compote: Cook chopped strawberries with sugar and lemon juice until juices release; thicken with cornstarch slurry.
