  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until fluffy. Allow to cool.
  2. In a large mixing bowl, combine the cooled quinoa with red bell pepper, cucumber, carrots, peanuts, and cilantro.
  3. In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss to coat evenly.
  5. Chill for at least 30 minutes before serving to enhance flavors.
