  • ¼ cup brown sugar
  • 1 ½ teaspoons fresh ginger (peeled and grated)
  • 3 cloves garlic (minced)
  • 1 tablespoon honey
  • 2 pounds boneless, skinless chicken (cut into chunks)
  • 3 tablespoons mirin or sesame vinegar

Instructions

  1. Soak bamboo skewers in water for 20 minutes.
  2. In a small saucepan, combine soy sauce, brown sugar, ginger, garlic, honey, and mirin. Bring to a boil.
  3. Mix cornstarch with water to create a slurry; add to the sauce and simmer until thickened.
  4. Reserve half of the sauce for basting and let the remaining cool.
  5. Marinate chicken in the cooled sauce for at least 30 minutes.
  6. Thread marinated chicken onto soaked skewers.
  7. Preheat grill over medium-high heat; grill skewers for 3-5 minutes per side until cooked through.
  8. Baste with reserved teriyaki sauce before serving.
