  • 2 Sweet Potatoes (1 pound each), quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread quartered sweet potatoes and apple on a greased baking sheet in a single layer.
  3. Roast for about 40 minutes until tender.
  4. In a soup pot, heat olive oil over medium heat. Sauté onion, celery, carrot, and bay leaf for about 5–7 minutes until tender.
  5. Remove the bay leaf; add roasted sweet potatoes and apple along with chicken broth.
  6. Blend until smooth using a blender or immersion blender.
  7. Stir in cream, lemon zest, and juice; season with salt and pepper.
  8. Gently heat without boiling before serving.
