  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained

Instructions

  1. 1. Season diced chicken with salt and pepper; coat evenly with cornstarch.
  2. 2. Heat vegetable oil in a wok over medium-high heat and fry the chicken until golden (8-10 minutes). Remove and set aside.
  3. 3. In the same pan, stir-fry onion and bell peppers for 3-5 minutes until tender.
  4. 4. Combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; add to the pan.
  5. 5. Return chicken to the pan; toss well to coat with sauce. Add pineapple pieces and cook for an additional 2-3 minutes.
