  • 6 tablespoons unsalted butter (room temperature)

  • 1 egg
  • 1/2 cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon sparkling sugar (for topping)

Instructions

  1. Preheat the oven to 350°F. Grease a 9" deep-dish pie plate.
  2. Peel and slice peaches into wedges; set aside to drain on paper towels.
  3. In a bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Mix in egg, buttermilk, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture; mix just until combined.
  5. Pour batter into the pie plate and arrange peach slices on top, pressing them down slightly. Sprinkle sparkling sugar over the cake.
  6. Bake for 10 minutes at 350°F, then reduce oven temperature to 325°F and bake for an additional 50-60 minutes or until a toothpick comes out clean.
