  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice
  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix diced strawberries with cane sugar and lemon juice; set aside.
  3. In another bowl, whisk together melted coconut oil, cane sugar, egg, all-purpose flour, oat flour, cinnamon, and salt until smooth.
  4. Spread half the base mixture into a greased baking dish. Pour the strawberry filling on top and crumble the remaining base mixture over it.
  5. Bake for about 45 minutes until golden brown.
  6. Allow to cool completely before slicing into squares.
