  • 3 large chicken breasts (cut into bite-sized pieces)
  • 2 small heads of broccoli (chopped)
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder slurry (2 tsp arrowroot + 2 tbsp water)
  • ½ cup mayonnaise
  • 23 tbsp water
  • Sesame seeds (for topping)

Instructions

  1. Cook rice according to package instructions; fluff with a fork.
  2. In a mixing bowl, combine olive oil, salt, pepper, chili powder, smoked paprika, onion powder, oregano, soy sauce, honey, rice vinegar, minced garlic, and sriracha to create the marinade.
  3. Add chicken to the marinade; let sit for at least 10 minutes.
  4. Preheat air fryer to 375°F (190°C) and cook marinated chicken for 15-20 minutes until cooked through.
  5. Blanch chopped broccoli in boiling water for 3-4 minutes until bright green; drain immediately.
  6. In a small saucepan, heat remaining marinade with ground ginger and arrowroot slurry until thickened.
  7. Assemble bowls with rice as the base topped with broccoli and air-fried chicken; drizzle with sticky sauce.
