Ingredients

  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (cut into ¾-inch pieces)
  • 4 fully cooked chicken or turkey sausages (sliced)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt

Instructions

  1. Heat 1 tbsp of olive oil in a skillet over medium-high heat.
  2. Add sliced sausage to the skillet and sauté until browned. Remove and set aside.
  3. In the same skillet, lower the heat to medium and add the remaining olive oil along with zucchini, onion, and bell pepper. Season with garlic powder, oregano, basil, onion powder, salt, and pepper. Cook until vegetables are tender.
  4. Return the sausage to the skillet along with minced garlic. Stir well and cover for a couple of minutes to meld flavors.
