Ingredients
- 1 ½ cups dried white kidney beans
- 1 ½ cups dried Romano beans
- 4 smoked sausages, roughly chopped
- 2 onions, finely diced
- 2 carrots, shredded or diced
- 4 cloves garlic, grated
- 2 tbsp vegetable oil
- 1 dried bay leaf
- Salt and black pepper to taste
Instructions
- Soak the beans in water for at least 6 hours; drain and boil in fresh water for about 20 minutes. Drain again.
- In a large soup pot, heat vegetable oil over medium heat. Add the smoked sausage and cook until browned (about 5 minutes). Remove and set aside.
- In the same pot, sauté onions and carrots until soft (about 5 minutes).
- Return the sausage to the pot along with both types of beans, bay leaf, and approximately 4 liters of water. Cook over medium heat for about 40–45 minutes.
- In a small pan, combine garlic with some oil; cook until fragrant. Stir in flour and smoked paprika.
- Slowly add this mixture to the soup while stirring continuously; let simmer for an additional 5 minutes before serving hot.
