  • 1 cup finely chopped yellow onions
  • 1 cup diced red peppers
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 (15-ounce) can of tomato sauce (no added sugar)
  • 1 (15-ounce) can of diced fire-roasted tomatoes
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 (15-ounce) can of kidney beans, rinsed and drained
  • 1 (15-ounce) can of pinto beans, rinsed and drained
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 teaspoons kosher salt (used separately)
  • 2 tablespoons optional hot sauce

Instructions

  1. Prep your veggies by chopping the onions, dicing the red peppers, slicing the carrots, and dicing the celery.
  2. Add all vegetables into the crockpot along with the tomato sauce and fire-roasted tomatoes.
  3. Stir in all three types of beans.
  4. Season with garlic powder, ground cumin, mild chili seasoning, smoked paprika, fresh lime juice, and kosher salt.
  5. Mix well and cover. Cook on low heat for 4 hours.
  6. Taste before serving and adjust seasonings as needed.
