Ingredients

  • ⅓ cup water (or chicken broth)
  • ⅓ cup low sodium soy sauce
  • 2 tablespoons honey
  • 2 teaspoons sesame oil
  • 2 tablespoons minced fresh ginger
  • 4 cloves garlic (minced)
  • 2 teaspoons cornstarch
  • ⅛ teaspoon crushed red pepper flakes (or to taste)
  • 2 ½ tablespoons olive oil (or avocado oil, divided)
  • 1 ½ pounds large shrimp (peeled and deveined, tail on or off)
  • 2 carrots (julienne cut)
  • 1 red bell pepper (thinly sliced)
  • 8 ounces sugar snap peas
  • 4 green onions (white and light green parts only, chopped)
  • 4 cups cooked rice
  • sesame seeds (optional)

Instructions

  1. In a small bowl or liquid measuring cup, combine all sauce ingredients.
  2. Whisk until well mixed and set aside.
  3. Pat the shrimp dry with paper towels.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Add shrimp in a single layer; cook for about 2 minutes per side until pink.
  6. Transfer cooked shrimp to a clean plate.
  7. Add remaining olive oil to the skillet.
  8. Add julienned carrots, sliced bell peppers, and sugar snap peas.
  9. Cook while stirring frequently for about 2-3 minutes until vegetables are crisp-tender.
  10. Whisk the sauce again to make sure it's combined well before pouring it into the skillet with vegetables.
  11. Return cooked shrimp to the pan and cook while stirring for about 1 minute until sauce has thickened.
  12. Stir in chopped green onions.
  13. Serve your delicious Shrimp Stir Fry over cooked rice.
  14. Garnish with sesame seeds if desired.
