  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • Optional: 1 tsp honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss trimmed asparagus and halved radishes on a baking sheet with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
  3. Roast the vegetables for 20–25 minutes, turning halfway through until they are tender and lightly browned.
  4. In a mixing bowl, whisk together the remaining olive oil, whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, and optional honey until well combined.
  5. Season the vinaigrette with salt and pepper to taste.
