  • 50 g grated Parmesan cheese

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in stone-ground grits, reduce heat to low, and cook uncovered for 20-25 minutes until thickened. Stir in heavy cream, butter, cheddar cheese, salt, and pepper. Keep warm.
  2. Coat shrimp with Cajun seasoning. In a large skillet, heat olive oil and butter over medium-high heat; sauté minced garlic until fragrant. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from skillet.
  3. Season red snapper fillets with Cajun seasoning. In the same skillet, cook snapper for 3-4 minutes per side until golden brown. Remove from skillet.
  4. For the sauce: Melt butter in the skillet, add garlic, Cajun seasoning, smoked paprika, and chicken broth; simmer for 2 minutes. Stir in heavy cream and Parmesan cheese until smooth.
