  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 1 1/2 packages SURE-JELL powder pectin (1.75 ounces each)
  • 5 cups white sugar

Instructions

  1. Sterilize six 8-ounce canning jars and lids according to instructions, then heat water in a hot water canner.
  2. In a large saucepan over high heat, combine red and green bell peppers with jalapeño, apple cider vinegar, and Sure-Jell pectin. Bring to a rolling boil while stirring constantly.
  3. Stir in the sugar quickly, return to boil, and cook for an additional 2-3 minutes before removing from heat.
  4. Ladle the mixture into prepared jars, filling each to about 1/4 inch from the top. Seal with lids and screw bands tightly.
  5. Process jars in boiling water for five minutes, then allow them to cool completely.
