  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond butter, brown sugar, pumpkin puree, vanilla extract, and egg. Mix until well blended.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Fold the dry mixture into the wet mixture until just combined. Gently stir in chocolate chips.
  5. Using a cookie scoop, portion out dough onto the prepared sheet; place marshmallows on top and seal the dough around them.
  6. Bake for 10-12 minutes until lightly golden. Allow to cool before serving.
