- 2½ sticks unsalted butter, room temperature

- 4 tbsp pistachio paste
Instructions
- Preheat the oven to 465°F (240°C). Line a baking sheet with parchment paper and place two ungreased pastry rings on it.
- In a food processor, finely grind the pistachios with powdered sugar and cake flour; set aside.
- Whip egg whites with salt until foamy. Gradually add sugar while whisking until stiff peaks form.
- Gently fold in the dry mixture into the meringue until combined.
- Divide batter between the pastry rings and smooth tops. Bake at 350°F (180°C) for 15 minutes.
- Cool the layers gradually in the oven with the door ajar before releasing them from rings.
- For buttercream, beat egg yolks until thick. Cook sugar with water to make syrup; pour into yolks while beating.
- Gradually add softened butter, then mix in vanilla, pistachio paste, and salt.
- Assemble by layering the dacquoise rounds with buttercream in between, finishing with more buttercream on top.
