Instructions

- In the same skillet, sauté onion, garlic, and bell pepper until softened (about 5 minutes).
- Stir in pineapple and cook for another 2 minutes to caramelize slightly.
- Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper; bring to a boil.
- Reduce heat to low; cover tightly with a lid and simmer for about 18–20 minutes until rice is cooked through.
- Return the cooked chicken to the skillet; mix well and heat through for an additional minute or two before serving.
