  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)

Instructions

  1. Heat olive or sesame oil in a skillet over medium heat. Add diced chicken and cook until golden brown and fully cooked, about 6-8 minutes. Remove from skillet.
  2. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  3. Mix in soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Stir well.
  4. Create a slurry by mixing cornstarch with water, then stir into the sauce mixture. Cook until slightly thickened, about 2-3 minutes.
  5. Add the cooked chicken back to the skillet along with pineapple chunks and diced bell pepper; stir to combine.
