  • 3 peaches (pitted, peeled, and thinly sliced)

  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp fine sea salt
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F and line a 9×13 baking dish with foil, then spray with cooking spray.
  2. In a large bowl, mix together 2 cups flour, ½ cup powdered sugar, and ½ teaspoon cinnamon. Cut in 1 cup softened butter until crumbly. Press into the bottom of the prepared dish and bake for 20 minutes.
  3. Layer sliced peaches evenly over the baked crust.
  4. In another bowl, blend 12 oz softened cream cheese until smooth. Gradually add ¾ cup sugar, then mix in 3 eggs one at a time followed by 1 teaspoon vanilla extract.
  5. Pour the cheesecake mixture over the peaches.
  6. For the topping, combine 1½ cups flour, ¼ cup brown sugar, ¼ cup granulated sugar, 1 teaspoon cinnamon, optional nutmeg, and salt. Stir in ½ cup melted butter until crumbly and sprinkle over the cheesecake layer.
  7. Bake for 45-55 minutes until golden brown on top and slightly jiggly in the center. Allow cooling completely before refrigerating.
