  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 Tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 1/2 cups dry roasted unsalted peanuts
  • 1/2 cup granulated sugar
  • 3 Tablespoons salted butter (cubed)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 400°F. Roll out the unbaked pie crust and transfer it to a pie plate. Crimp edges and prick with a fork.
  2. Bake crust lined with parchment and weights for 15 minutes; remove weights and bake another 15 minutes until golden brown. Allow cooling.
  3. In a saucepan over medium heat, melt peanut butter chips, sweetened condensed milk, and salted butter until smooth.
  4. Stir in miniature vegan marshmallows until fully melted and combined.
  5. Pour filling into baked crust and sprinkle dry roasted peanuts on top.
  6. For caramel topping, melt sugar in a saucepan until amber; add cubed butter and then heavy cream, stirring to combine for one minute.
  7. Remove from heat and stir in vanilla extract and kosher salt; cool slightly before drizzling over pie.
  8. Refrigerate for at least four hours before serving.
