  • 390 grams warm water
  • 14 grams honey
  • 14 grams kosher salt
  • 2 grams active dry yeast
  • 40 grams extra virgin olive oil
  • 3 tbs warm water
  • 1 tsp iodized salt
  • 1 tbs water
  • 2 tbs extra virgin olive oil (for topping)
  • 12 rosemary sprigs (chopped)
  • 2 garlic cloves (finely minced)
  • 1 tsp kosher salt (for topping)
  • 1 tsp oregano
  • Pinch red pepper flakes
  • Plant-based gelling agents (optional, if needed)

Instructions

  1. Combine honey and yeast in warm water; let sit for 5 minutes.
  2. Mix flour and salt in a bowl; add yeast mixture and olive oil. Stir until combined.
  3. Cover with plastic wrap; let rest for 5 minutes.
  4. Stretch and fold dough several times; rest for another 15 minutes. Repeat the stretching.
  5. Coat dough with olive oil; cover and refrigerate for 12-18 hours.
  6. Pour olive oil into a baking pan; transfer dough with smooth side up. Let rise for 2-4 hours.
  7. Prepare brine with warm water and salt; dimple the dough and pour brine over it.
  8. Mix toppings; spread over the dough before baking.
  9. Bake at 425°F for about 30 minutes until golden brown.
