  • 4 chicken drumsticks (bone-in)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups rice (uncooked)
  • 1 ½ cups chicken stock
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and spread chopped onions in a baking dish. Dot with butter and bake for about 15 minutes until onions are browned.
  2. In a bowl, combine thyme, garlic powder, paprika, onion powder, salt, and black pepper. Rub this mixture onto the chicken drumsticks.
  3. After the onions have browned, layer uncooked rice over them in the baking dish. Pour in chicken stock and water; stir in minced garlic.
  4. Place the seasoned chicken on top of the rice mixture and cover tightly with foil.
  5. Bake covered for 30 minutes. Remove foil, spray oil on chicken pieces, and bake uncovered until golden brown.
  6. Garnish with fresh parsley before serving.
