  • 1 cup white Basmati rice
  • 2 tablespoons olive oil
  • 6 strands of saffron
  • ¼ cup boiling water
  • 1 ¼ cups water
  • 1 white onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • Salt and pepper (to taste)
  • ½ cup mixed dried fruits (such as apricots, raisins, cherries)
  • ¼ cup almonds (toasted and chopped)
  • ¼ cup pistachios (toasted and chopped)

Instructions

  1. Bloom saffron by steeping strands in boiling water for 10 minutes.
  2. Rinse Basmati rice under cold water until clear to remove excess starch.
  3. In a medium saucepan over medium-low heat, sauté chopped onion in olive oil until soft.
  4. Add minced garlic and spices; cook until fragrant.
  5. Stir in rinsed rice for 3 minutes, then add saffron-infused water and remaining water. Season with salt and pepper.
  6. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes until absorbed.
  7. Turn off heat; lay dried fruits on top without stirring. Cover again for 10 minutes.
  8. Fluff rice with a fork and mix in toasted almonds and pistachios before serving.
