  • 15 oz Kidney Beans
  • 14 oz Diced Tomatoes
  • 8 oz Tomato Sauce
  • 2 tbsp Tomato Paste (diluted in about 4 tbsp water)
  • 1 cup Ditalini Pasta
  • 6 cups chicken stock
  • 1 cup onion (roughly chopped)
  • 1.5 tbsp garlic (minced)
  • 3/4 cup carrot (roughly cubed)
  • 3/4 cup celery (roughly chopped)
  • 3 tbsp Olive Oil
  • Salt (to taste)
  • 1 tsp Paprika
  • 1/4 tsp oregano (dried)
  • 1/2 tsp Italian seasoning (dried)
  • 1.5 tsp Ground Black Pepper
  • 1/2 tsp red pepper flakes
  • Fresh parsley (for garnish)

Instructions

  1. Set the Instant Pot to SAUTE on HIGH heat. Add olive oil and ground beef, browning until cooked through.
  2. Stir in chopped onion and garlic; sauté until fragrant.
  3. Add carrots and celery; sauté for another minute.
  4. Pour in chicken stock to de-glaze the pot, scraping up any browned bits.
  5. Mix in seasonings: paprika, oregano, Italian seasoning, salt, and red pepper flakes.
  6. Stir in diced tomatoes, rinsed beans, and pasta.
  7. Cancel SAUTE mode; close the lid and set to PRESSURE COOK on HIGH for 4 minutes.
  8. Once cooking is complete, perform a quick pressure release carefully and open the lid.
  9. Garnish with parsley and serve immediately.
