  • 1 medium head of cauliflower
  • 1 ½ cups cherry tomatoes
  • ½ cup red onion
  • ⅓ cup black olives (Kalamata)
  • ⅓ cup green olives
  • ¼ cup fresh parsley
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Transfer immediately to an ice bath.
  2. In a large bowl, combine blanched cauliflower, cherry tomatoes, red onions, olives, and parsley.
  3. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes.
  4. Pour the dressing over the salad and toss well to coat. Refrigerate for at least 30 minutes before serving.
