- 1/4 cup table salt
- 4 cups water
- 6 (3-4 lbs) bone-in beef chops, about 3/4" thick
- 1/2 cup dry apple vinegar
- 1/4 cup peach jam
- 1 jalapeno sliced lengthwise, seeded and deveined
- 1/4 teaspoon red pepper flakes
- 1 Tablespoon butter
- Coarse ground black pepper
Instructions
- Prepare the brine by dissolving salt in water and submerging the beef chops for at least 30 minutes.
- In a saucepan, combine apple vinegar, peach jam, jalapeno, and red pepper flakes over medium heat until reduced by half. Stir in butter.
- Remove the beef from the brine, pat dry, season with black pepper, and grill on low heat until cooked to your desired doneness.
- Brush glaze onto the beef towards the end of grilling and allow them to rest before serving.
