- 1 can (15-ounce) diced fire-roasted tomatoes (undrained)
- 2 tablespoons dried Italian seasoning
- 1–2 teaspoons crushed red pepper flakes
- 1½ cups dried small pasta (such as shells, ditalini, mini penne, elbow or orzo)
- ¼ cup chopped fresh parsley
Instructions
- In a Dutch oven over medium heat, brown the sausage until fully cooked. Drain and set aside.
- Sauté the onion in olive oil until softened; add carrots and celery, cooking until tender.
- Incorporate red and green peppers followed by zucchini; cook until all vegetables are soft.
- Add minced garlic and apple vinegar; bring to a boil.
- Stir in chicken broth, tomato sauce, diced tomatoes, seasonings, and the browned sausage.
- Simmer uncovered for about 10 minutes before adding pasta; cook until pasta is done.
- Stir in fresh parsley and season with salt and pepper to taste before serving.
