  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites (room temperature)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium heavy-bottom saucepan fitted with a candy thermometer, combine water, sugar, and corn syrup. Cook on medium-high heat without stirring until it reaches 240°F.
  2. Meanwhile, in a stand mixer or using an electric hand mixer, whip egg whites and cream of tartar on medium speed until soft peaks form (about 3-4 minutes).
  3. Once the sugar syrup reaches the desired temperature, remove it from heat and slowly pour into the whipped egg whites while mixing on medium speed.
  4. Increase speed to medium-high and whip for about 7-8 minutes until thickened.
  5. Gently whisk in vanilla extract.
  6. Allow to cool completely before using or storing in an airtight container.
