- 1 fresh pineapple, skin removed and cut into rounds
- 2 lbs boneless chicken thighs (or breasts)
- 1/2 cup coconut aminos
- 1/4 cup pineapple juice
- 1/4 cup tomato paste
- 4–6 pitted dates, soaked and drained
- 2 tsp garlic powder
- 2 tsp chili powder
- 1 tsp smoked paprika
Instructions
- Soak pitted dates in warm water for 10-15 minutes until softened.
- In a blender, combine soaked dates, coconut aminos, pineapple juice, tomato paste, garlic powder, chili powder, and smoked paprika. Blend until smooth.
- Place chicken in a shallow dish and pour marinade over it. Toss to coat thoroughly; cover and refrigerate for at least 30 minutes or up to 24 hours.
- Preheat grill to high heat (about 500°F). Grill marinated chicken and pineapple rounds for about 5-6 minutes per side until cooked through and caramelized.
