Instructions

  1. Cook jasmine rice by boiling water with rice in a saucepan; simmer for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; cook until browned, about 6-8 minutes.
  3. Sauté garlic and ginger in the same skillet for 1 minute; add sliced onions and bell peppers, cooking until tender yet crisp.
  4. Whisk together soy sauce, honey, and sriracha; pour over vegetables. Return cooked chicken and pineapple to the skillet; toss to coat for 2-3 minutes.
