  • 2 tablespoons avocado oil
  • 1 ripe avocado
  • ½ yellow onion
  • 1 pound tomatillos
  • 2 cloves garlic
  • 1 jalapeño (adjust for spice level)
  • Fresh cilantro
  • Juice of 1 lime and 1 orange
  • Corn tortillas

Instructions

  1. Make the Avocado Salsa: In a skillet over medium heat, combine avocado oil, tomatillos, onion halves, garlic, jalapeño, and water. Cook until softened (about 10 minutes). Stir in cilantro, lime juice, oregano, and salt.
  2. Marinate the Steak: Mix orange juice, lime juice, half of the cilantro, paprika, kosher salt, onion powder, black pepper, smoked paprika, cumin, and oregano in a bowl. Add steak and marinate for at least 15 minutes.
  3. Grill the Steak: Preheat grill or skillet over medium-high heat. Brush steak with avocado oil and grill for 3–4 minutes per side until cooked to preference. Let rest before slicing.
