- 1/8 tsp black pepper
- 2 Tbsp light olive oil
- 2 Tbsp fresh lemon juice (from half a lemon)
- 2 large lemons (thinly sliced)
- 16 10-inch bamboo skewers
Instructions
- Soak bamboo skewers in water for at least one hour to prevent burning.
- Preheat the grill to medium heat (approximately 375°F).
- In a medium mixing bowl, combine chopped parsley, pressed garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice. Mix well.
- Assemble the skewers by alternating pieces of salmon and folded lemon slices onto two skewers at a time for easier flipping.
- Brush both sides of each skewer with the marinade mixture.
