  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 pineapple
  • 5 cups chopped romaine lettuce
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Preheat grill to medium-high heat.
  2. Slice pineapple into rings and brush with olive oil. Season chicken breasts with olive oil and spices.
  3. Grill chicken for about 7 minutes per side until cooked through; grill pineapple for 3–4 minutes per side until caramelized.
  4. While grilling, chop romaine lettuce, red onion, cucumber, cherry tomatoes, and avocado; set aside in a mixing bowl.
  5. Whisk together dressing ingredients in a small bowl until combined.
  6. Slice grilled chicken and assemble salad with all ingredients in a large serving bowl. Drizzle dressing over the top and toss gently before serving.
