  • 4 pounds boneless skinless chicken thighs or breasts
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic
  • Sliced green onions for garnish

Instructions

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic to create the marinade.
  2. Reserve 1 cup of the marinade for basting later. Place the remaining marinade and chicken into a ziplock bag. Seal and refrigerate for at least 3 hours or overnight.
  3. Preheat the grill to medium heat. Remove chicken from the marinade and grill each side for about 6-8 minutes until fully cooked (165°F internal temperature).
  4. Baste with reserved marinade during the last five minutes of grilling. Garnish with sliced green onions before serving.
