  • 1 large piece of flank steak (this recipe makes enough marinade for 3 pounds of meat)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 T soy sauce
  • 1/2 tsp. ground chipotle chile powder (or use your favorite hot sauce)
  • 2 tsp. lime zest (optional)

Instructions

  1. In a mixing bowl, combine lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, and chipotle powder.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the steak from the refrigerator and let it come to room temperature.
  5. Grill each side for 4-5 minutes for medium-rare or 6 minutes for medium doneness.
  6. Use an instant-read thermometer to check for doneness (140-145°F for medium rare).
  7. Let the steak rest for 5 minutes before slicing against the grain.
