  • 12 oz pasta (penne, fusilli, or your choice)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ cup feta cheese (crumbled)
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Sauté minced garlic and finely chopped red onion for about 2 minutes until fragrant.
  3. Add cherry tomatoes and Kalamata olives to the skillet. Stir in lemon juice, lemon zest, oregano, salt, and pepper. Cook for about 5 minutes until tomatoes soften.
  4. Add the drained pasta to the skillet and toss everything together, adding reserved pasta water to reach desired sauce consistency.
  5. Remove from heat and gently fold in crumbled feta cheese. Garnish with fresh basil if desired.
