  • 2 cups raw basmati rice
  • 1 tablespoon oregano
  • 1 teaspoon dried dillweed
  • ⅓ cup olive oil
  • ½ cup chopped brown onion
  • 3 cloves garlic, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • Fresh parsley for garnish
  • 3 cups low-sodium chicken broth

Instructions

  1. Rinse the rice under cold water until clear; drain in a colander.
  2. In a saucepan over medium heat, add olive oil, then sauté chopped onions and garlic until soft.
  3. Stir in oregano and dillweed for about 30 seconds.
  4. Add the washed rice and stir for one minute.
  5. Pour in chicken broth and season with salt. Bring to a boil then reduce to low heat. Cover and simmer for 15-18 minutes until the liquid is absorbed.
  6. Remove from heat and mix in lemon zest, juice, and parsley. Cover again for 5 minutes to steam.
  7. Fluff with a fork before serving.
