  • 1 tsp sweet paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • ¼ cup apple vinegar
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 can (14 oz/400 g) cherry tomatoes
  • 3 tbsp chopped basil leaves
  • 2 mozzarella balls (chopped)
  • 3 tbsp grated Parmesan
  • Crushed red pepper flakes (for sprinkling)

Instructions

  1. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  2. In a large ovenproof skillet, heat olive oil and butter over medium-high heat. Cook chicken until browned and cooked through (about 5 minutes per side). Remove and keep warm.
  3. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with apple vinegar.
  4. Stir in salt, pepper, dried basil, tomato paste, and chicken broth; bring to a simmer.
  5. Add canned cherry tomatoes; cook for 5 minutes. Nestle chicken back into the sauce.
  6. Top with mozzarella and basil; sprinkle with red pepper flakes and Parmesan. Simmer or bake until melted.
