- 120 ml water
- 21 g active dry yeast
- 50 g sugar
- 550 g Manitoba flour (or bread flour)
- 2 eggs
- 70 g unsalted butter
- 350 g chocolate spread
- 750 ml vegetable oil (for frying)
- 80 g sugar (for dusting)
- 40 g powdered sugar (for dusting)
- 1 tsp cinnamon powder
Instructions
- In a bowl, combine lukewarm milk, water, yeast, and sugar; let sit until frothy (about 10 minutes).
- In a stand mixer, combine flour, eggs, and the yeast mixture. Knead on low then medium speed for about 6-8 minutes until smooth. Incorporate butter and knead for another 3-4 minutes.
- Cover the dough and let it rise at room temperature for about an hour; refrigerate for 30 minutes.
- Roll out the dough into a rectangle and cut into triangles; shape into croissants and allow to rise for another hour.
- Heat vegetable oil in a deep pan to 170-180°C (340-355°F). Fry the beignets until golden brown on both sides.
- Dust with cinnamon sugar while warm and fill with chocolate spread using a pastry bag.
