  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 stick Earth Balance® butter (cut into small pieces)
  • 1/3 cup boiling water

Instructions

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, combine sliced peaches with brown sugar, sugar, cinnamon, corn starch, and lemon juice. Stir until well-coated.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
  4. In another bowl, whisk together flour, sugars, baking powder, and salt. Cut in butter until crumbly.
  5. Add boiling water and stir gently until just combined.
  6. Spoon the topping over the baked peaches evenly.
  7. Sprinkle a mixture of sugar and cinnamon on top before returning to the oven to bake for about 35 minutes until golden brown.
