- 3 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- Salt and pepper, to taste
- 6 slices of baguette or crusty bread (toasted)
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- Sear the short ribs in a Dutch oven with olive oil over medium-high heat until browned on all sides. Remove and set aside.
- In the same pot, melt butter and add sliced onions. Cook on low heat until golden brown, about 30–40 minutes.
- Stir in minced garlic and cook for one more minute. Then add beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper.
- Return the short ribs to the pot; bring to a boil then reduce heat and simmer for 2–3 hours until tender.
- While simmering, toast baguette slices until golden brown. Serve the soup topped with toasted bread and cheese.
