  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1 cup milk
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

  • 2 tbsp pistachio paste
  • 1 cup powdered sugar (for icing)
  • 34 tbsp milk (for icing)
  • Green food color (optional)

Instructions

  1. Blanch the pistachios in boiling water for 2 minutes, then dry and remove their skins. Process until smooth.
  2. In a saucepan, heat milk and vanilla until boiling. In another bowl, whisk together egg, sugar, salt, and cornstarch. Gradually mix in hot milk.
  3. Return the mixture to the saucepan and cook until thickened like custard. Stir in butter and pistachio paste until melted; blend until smooth.
  4. Prepare the icing by mixing powdered sugar with milk and green food color to desired consistency.
  5. Fill croissants using a piping bag fitted with a Bismark tip; drizzle with icing and top with chopped pistachios.
  6. Allow to set at room temperature before serving.
