Instructions
- Blanch the pistachios in boiling water for 2 minutes, then dry and remove their skins. Process until smooth.
- In a saucepan, heat milk and vanilla until boiling. In another bowl, whisk together egg, sugar, salt, and cornstarch. Gradually mix in hot milk.
- Return the mixture to the saucepan and cook until thickened like custard. Stir in butter and pistachio paste until melted; blend until smooth.
- Prepare the icing by mixing powdered sugar with milk and green food color to desired consistency.
- Fill croissants using a piping bag fitted with a Bismark tip; drizzle with icing and top with chopped pistachios.
