  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes, peeled
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, finely chopped

Instructions

  1. 1. Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil and butter over medium-high heat.
  2. 2. Season the cubed beef with salt and pepper. Sear in the skillet until browned on all sides (6–8 minutes).
  3. 3. Add chopped onions and carrots; sauté until onions are translucent (about 4–5 minutes).
  4. 4. Sprinkle flour over the mixture, stir well, then add apple cider and beef broth. Bring to a boil while scraping up browned bits from the pan.
  5. 5. Transfer everything to an oven-safe Dutch oven or casserole dish, cover tightly, and bake for 60–90 minutes until the beef is fork-tender.
