Instructions

  1. Cook the pasta according to package directions; drain and cool.
  2. If using fresh corn, roast until tender; if using frozen corn, heat in a skillet until warm.
  3. In a bowl, mix Greek yogurt, mayonnaise, lime juice & zest, spices for the dressing.
  4. In a large bowl, combine cooled pasta with corn, onion, cilantro, jalapeno, and cotija.
  5. Drizzle dressing over the salad and toss gently to combine.
