Ingredients

  • 1.5 pounds zucchini
  • 0.5 yellow onion
  • 1.5 cups apple cider vinegar
  • 1.5 cups water
  • 1 tablespoon coarse kosher salt
  • 0.25 cup honey (or cane sugar)
  • 3 sprigs fresh dill
  • 6 cloves garlic (each cut in half)
  • 3 teaspoons peppercorns
  • 1.5 teaspoons dill seed
  • 1.5 teaspoons coriander seeds
  • 1.5 teaspoons crushed red pepper flakes

Instructions

  1. Sterilize three glass pint jars.
  2. Divide dill, garlic, peppercorns, coriander seeds, and red pepper flakes among jars. Pack sliced zucchini and onion tightly into each jar.
  3. In a saucepan, combine apple cider vinegar, water, salt, and honey. Bring to a boil while stirring until dissolved.
  4. Pour hot brine over packed jars ensuring vegetables are submerged.
  5. Cool jars at room temperature before sealing with lids and refrigerating overnight for best flavor.
